Can code make variables?

Basically, I'm on part two of Brackeys' "Programming in C#" tutorial (it's really good go check it out if you haven't already)

and am trying to do the challenge thing where you calculate the average of three numbers. I want to make it so you input the amount of numbers the user needs an average from and then creates that many variables. I genuinely have no idea if this is possible, let alone by a beginner.
